November 25, 2024. The fermented leek paste is lovely and bitter today. It will ferment on the countertop until it tastes right. We enjoyed leeks for paste, sauerkraut, and roasting over the last week. We will be smart in 2025. The leek harvest will be spread out over September, October, and November.
